There are two types of dough used for making doughnuts. The following directions are for making doughnuts using baking powder instead of yeast. Doughnuts made from baking powder are considered a quick bread.
Ingredients
- 2 eggs
- 1 cup sugar
- 2 tablespoons shortening
- 3/4 cup milk
- 3 1/2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
Steps

1Using a mixer cream the eggs, sugar and shortening until light.

2Combine the flour, baking powder and salt in a separate bowl.

3Add the flour mixture to the egg mixture alternately with the milk.

4Stir together until a soft dough forms.

5Add the spices and mix well.

6Chill the dough for 2 hours.

7Remove the chilled dough from the refrigerator.

8Lightly dust the pastry cloth and rolling pin stocking.

9Roll the dough out about 1/3 to 1/2-inch thick.

10Cut out doughnuts using a doughnut cutter.

11Fry doughnuts in hot oil, between 370 to 380 °F (188 to 193 °C).

12Place fried doughnuts on white paper towels to drain.

13Roll in sugar or cinnamon sugar while warm.
