The sweetness of pineapple and carrot in every bite - these doughnuts remind you of the real carrot cake.
Makes: 18 large doughnuts
Ingredients
Doughnut Batter
- ½ cup butter, softened
- 1 egg
- ½ teaspoon salt
- ½ teaspoon vanilla
- ⅔ cup brown sugar
- ⅔ cup vanilla yogurt
- ⅔ cup crushed pineapple, drained (reserve juice)
- ⅔ cup shredded carrots
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 2 cups flour
Frosting
- 4 ounces cream cheese
- 4 tablespoons butter
- 2 tablespoons pineapple juice (from the reserved drained juice)
- ¾ cup powdered sugar
- ½ cup chopped walnuts

1Mix the wet ingredients. In a large bowl, beat the sugar and butter with a stand or hand mixer.
