Ingredients

  • 3/4 cup egg substitute (or 3 whole eggs)
  • 3/4 cup mild olive or canola oil (or 4 sticks [1 cup] butter)

  • 1-1/2 cups applesauce or mashed ripe bananas (about 2 large bananas)
  • 1-1/2 cups mashed ripe papaya
  • 1-1/4 cup chopped nuts (walnuts, pecans, almonds, chopped dried figs and other chopped dried fruits can be used)
  • 4 cups white whole wheat flour (or a combination of 3/4 cups whole wheat flour and 1/4 cup white bread flour)
  • 1 teaspoon salt
  • 1 Tablespoon baking soda
  • 1 Tablespoon cinnamon (use less if you use cinnamon-flavored applesauce)
  • 1 teaspoon nutmeg (or 1 teaspoon allspice and 1 teaspoon ground ginger)
  • Optional ingredients
    • 1 Tablespoon grated fresh ginger (or 1/2 teaspoon ground ginger, or 1 Tablespoon minced crystallized ginger)
    • 1 Tablespoon grated orange zest and 1 tablespoon (14.8 ml) freshly squeezed orange juice (or substitute lime zest and juice)

    Preheat oven to 325ºF.

    Grease and flour 2 metal loaf pans or 24-36 small muffin pans lightly.

    Wash, peel, and shred carrots.

    Wash and cut papaya in half; scoop out seeds and membrane; peel and mash or puree papaya fruit.

    Combine eggs, oil, and sugar in the mixing bowl of an electric mixer. Mixing on low speed just until combined.

    Add carrots, (applesauce, if using), mashed papaya, nuts and/or dried fruits. Stir until well combined.
