Elephant foot yam is a vegetable used frequently in Andhra Pradesh to make many varieties of curries, gravy curries and chutneys. Apart from these dishes, it is also used to make kababs and sweet dishes. The following recipe is for a dry curry using elephant foot yam, suitable for serving as a main dish.
Ingredients
- 500 grams/17.6 oz peeled and chopped elephant foot yam
- 2 teaspoons salt
- 500 ml/17 fl oz water
- 2 tablespoons curd
- 3 whole and dried red chilies
- 1 teaspoon mustard seeds
- 1 teaspoon white lentils
- 2 sprigs of curry leaves
- 1 tablespoon sugar
- 1 teaspoon turmeric powder

1Wash chopped pieces of elephant foot yam under running water.
- Note! This type of yam can cause your hands to itch if cut with bare hands. Either wear disposable gloves when cutting or keep both your hands and the knife as dry as possible when cutting; once you touch water, the itching occurs.[1]
