This wikiHow teaches you how to change the format of long names while using the Messages app. Note that there isn't a way to change your contacts' names to display solely last names in the Contacts app.
Steps

1Open your iPhone's Settings. Do so by tapping the grey gear icon on one of your Home screens (it may be hiding in a folder entitled "Utilities").

2Scroll to the fifth group of options and select Contacts.

3Tap Short Name. It should be in the middle of the screen.

4Make sure the Short Name switch is green. If it isn't, slide it right to the "On" position.

5Select Last Name Only. Doing so will change the name that's displayed at the top of your Messages app when texting a contact from "First" to "Last".
- For example, if you were texting your friend Jane Doe, the name at the top of your conversation would change from "Jane" to "Doe" after altering this setting.
