1Peel and cut purple sweet potatoes. Use a vegetable peeler to remove the skin from the purple sweet potatoes, then rinse the purple sweet potatoes with running water. Cut each one into 2-inch (5-cm) chunks.
- There's no need to scrub the purple sweet potatoes clean beforehand because you’ll be removing the skins. After peeling, a simple rinse will be enough to remove any residual dirt from the flesh.

1Melt the butter. Put 38 grams of butter in the microwave for 20 seconds.

2Beat the egg in a bowl with a fork or whisk.

3Knead the pastry dough until it's soft, smooth, and stretchy. Mix 112 grams of wheat flour, 42 grams of corn starch, and 28 grams of sugar in the egg butter mixture.
- To knead the dough by hand, coat your hands with flour and sprinkle your work surface with a little flour. Then pushing the dough down and then outward, only using the heels of your hands.
