Ready for a sinful, delicious treat that will be hard to resist? We have just the thing —Bailey's Irish Cream Liqueur cheesecake! This is a fantastic recipe that you can use in loads of different ways — not the least of which starts with the variety of flavors including the original (chocolate), hazelnut, mint chocolate, caramel, and coffee. However you slice it, this is one scrumptious cheesecake!
Ingredients
- 13 ounces (380g) graham cracker crumbs
- 4 tablespoons butter, softened
- 1 pound (450g) ricotta cheese
- 1 8 ounce package cream cheese (220g) cream cheese
- 4 eggs
- 4-1/3 ounces (120g) sugar
- 2-2/3 ounces (75g) Bailey's Cream Liqueur
- 1 teaspoon vanilla
- 1/4 teaspoon salt

1Assemble the ingredients. Measure everything out before you get started—it'll make the job easier and more fun.

2Make the crust. While you can always buy a pre-formed graham cracker pie shell, making it yourself is easy, and tastes way better!
- Grease the inside of a springform pan. You can use vegetable oil, or softened butter (our preference).
- Mix the crumbs and softened butter together until well blended, then press over the bottom and sides of the pan. Place the pan in the refrigerator to chill and set while you make the batter.

3Preheat the oven to 325ºF/165ºC. Get this started now, so when you're cheesecake is assembled, it'll be ready to bake.

5Put it all together. Pour the cheesecake batter into the chilled crumb pan.

7Let it cool! I know you'll be tempted, but let the cheesecake cool down for about 20 to 30 minutes in the pan.

8Loosen the springform. When the cheesecake has cooled, remove the cheesecake from the pan and let it finish cooling completely.
