Nutritional yeast gives the vegan Gruyere its cheese flavor, while the pureéd oats and cornstarch add creaminess. If you have no tahini, then you can substitute almond butter.

Serves 4

Ingredients

  • 1 cup water
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. tahini paste
  • 2 tbsp. nutritional yeast
  • 2 tbsp. oats
  • 4 tsp. cornstarch
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/4 tsp. salt

Steps

  1. 1
Combine all of the ingredients in a food processor. Process the ingredients until they are smooth.
  2. 2
Pour the ingredients into a small saucepan. Use a flat spatula to scrape the puree from the inside of the food processor bowl.
  3. 3
Heat the cheese over medium heat. Stir the mixture constantly until the cheese begins to thicken.
  4. 4
Turn off the heat and continue to stir the cheese for an additional minute. Remove the pan from the heat and set it aside.
  5. 5
Allow the cheese to cool. You can either incorporate it into a recipe right away or store it in the refrigerator in an airtight container.

Warnings

  • Never use baking yeast as a substitute for nutritional yeast, particularly in no-cook recipes. Baking yeast may continue to grow in the intestines, where it can cause digestive difficulties and problems with nutrient absorption.

Things You'll Need
