Toast champignon, or mushroom toast, is a typical French snack. You can serve this almost any time of the day as a meal or a snack. The mushrooms add a meaty, woody touch of flavour while the garlic and parsley add savoury seasoning. This recipe should serve 1 to 2 people.

Ingredients

  • Handful of parsley
  • Butter
  • 250 grams of mushrooms (Slightly over ½ pound of mushrooms)
  • 1 clove of garlic, crushed
  • 2 thick slices of bread
  • Pepper
  • Salt

Steps

  1. 1
Clean the mushrooms. Some people like to wipe the mushrooms clean while other people like to rinse them. Choose your favorite method for cleaning mushrooms. You can even peel them if you like. Whatever you do, please do not soak the mushrooms before cooking them, this will make them soggy.
  2. 2
Cut the mushrooms into quarters or small bite sized pieces if you are using quite large mushrooms. If you're using baby button mushrooms, you can half them or even them whole.

  3. 3
Add plenty of butter to a frying pan. You want enough to coat the mushrooms while they are cooking.
  4. 4
Melt the butter and then add the mushrooms and make sure they’re all coated in butter.
  5. 5
Toast the bread while the mushrooms are cooking. Use diagonally slices from a French Stick if you like. It may be easier to grill some types of bread than use a toaster. Do what works for you.
  6. 6
Cook the mushrooms until are almost golden brown, stirring often, then add the crushed garlic and parsley.
  7. 7
Season mushrooms with pepper and salt.
  8. 8
Give it a final good mix and let the mushrooms fry until fully golden brown in colour and tender enough to eat.
  9. 9
Remove the toast from the toaster and spread some butter on the browned toast.
  10. 10
Lay the mushrooms on the toast and it’s ready to be served!
