Imagine. You have just been invited to a picnic and, of course, you have to bring something to eat. Stuffed jalapeños are a perfect option since they take 1 hour until they are ready to be consumed!

Ingredients

Cream cheese and bacon stuffed jalapeños:

  • 12 fresh jalapeño peppers, halved lengthwise and seeded
  • 1 (8 ounce) package whipped cream cheese
  • 12 slices bacon, cut in half

Shrimp and cheese stuffed jalapeños:

  • 24 large jalapeno peppers, the larger the better
  • 48 large shrimp
  • 10oz cheddar or any other cheese
  • 4 oz cream cheese
  • Salt and pepper to taste
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 48 small pieces of bacon or prosciutto for wrapping the jalapeno halves

Method 1 of 2:
Cream cheese and bacon stuffed jalapeños

  1. 1
    Preheat oven to 400 degrees.
  2. 2
Cut the jalapeños in half. It's a good idea to wear kitchen gloves when cutting jalapeños or other hot peppers; otherwise, the capsaicin oil that makes them spicy can burn your hands. Then, using a spoon, scoop out the white rinds and the seeds inside the jalapeños halves (these will make the jalapeños too hot to be edible unless they are removed before cooking).

Stuff each jalapeño half with whipped cream cheese.
  4. 4
Wrap a half slice of bacon around each stuffed jalapeño half.

Place the wrapped jalapeño halves in one layer on a medium baking sheet.
  6. 6
Bake the peppers in the preheated oven for 45 minutes or until the bacon is evenly browned and crisp.

    Finished.

Method 2 of 2:
Shrimp and cheese stuffed jalapeños

  1. 1
Parboil the peppers. Do this for 10 to 15 minutes. Remove from the water and set aside.
  2. 2
Peel the shrimp. Chop into 12 inch (1.3 cm) pieces.
  3. 3
    Grate the cheese.
  4. 4
Mix the cream cheese, grated cheese and shrimp together.
  5. 5
Add seasonings. Add salt and pepper to taste, and the garlic powder and cumin.
  6. 6
Cut the peppers lengthwise. Scoop out the middle seeds and the membranes.
    • Wear gloves when doing this and do not rub your eyes or nose while handling the peppers.
  7. 7
Stuff the cheese mixture inside the halved peppers. Wrap with either bacon or prosciutto.
  8. 8
Place on a baking sheet. Bake at a moderate temperature for 25 minutes, until the outside wrap turns crispy.
  9. 9
    Serve straight from the oven.
