Ingredients
- 2 cups hot mashed potatoes
- 1 cup peas
- 2 oz grated or shredded cheese
- 2 tablespoons milk
- 1 egg yolk for binding
- Salt to taste
- Cayenne pepper, to taste (optional, or use paprika for a milder flavor)
- Flour, egg and breadcrumbs for coating
- Frying oil

- Mixing bowl
- Mixing spoon
- Clean surface for shaping balls and plate to place balls on
- Pot, saucepan or deep fryer
- Kitchen paper towel
- Baking sheet and parchment/baking paper if baking

1Make the mashed potatoes if not done already.

2Mix together the mashed potatoes, peas, cheese and egg yolk. Add the seasoning too. Combine thoroughly.

3Shape into small balls.

4Roll each ball in a mixture of flour, egg and breadcrumbs to coat.

5Fry the balls. Either shallow or deep fry, depending on your preference.
- Alternatively, bake the balls. Place on a baking sheet covered in parchment paper and spray with oil before baking. Bake at 350ºF/180ºC for about 15 to 20 minutes, or until golden brown.

6Remove from the oil or oven when golden brown. Serve immediately.
