Phirni is a popular North-Indian sweet dish. Easy to make and vegetarian too! Follow the steps to make it.
Ingredients
- 2 liter (0.5 US gal) milk
- 100 grams rice
- water
- 1/2 cup sugar
- 1/2 teaspoon cardamom powder
- 1/2 cup pistachio nuts
- Some soaked saffron strands (optional, but better if added)
Steps

1Soak the rice. At least 3-4 hours before preparation of the dish, put the rice in a bowl, add water so that it reaches a little over the rice.

2Grind the soaked rice to make a paste.

3Boil the milk in a pan.

4Add sugar and rice paste to the milk.

5Cook until thick.

6Mix in the cardamom powder and saffron in the thickened milk.

7Stir a while.

8Remove from stove and keep in refrigerator for at least 2 hours.

9Serve chilled with pistachio nuts.
