A lot of us enjoy nachos. Whether it be chasing them down with some beers at the pub or for a quick meal, these tasty Mexican nachos are guaranteed to fill you right up. This will feed two very hungry people or up to four as a light meal and is easy as you use ready made pasta sauce, note, a bolognaise type sauce is recommended over carbonara or al fresco, but, any thing goes really.

Ingredients

  • 500g premium beef mince
  • 420g tin of pasta sauce (any kind, homemade would be the best)
  • 420g tin of Mexican style beans (preferably Mexican beans)
  • Cheese
  • Corn chips
  • Cooking oil
  • Sour cream (optional)
  • Onion (optional)
  • Garlic (optional)

    Pre-heat oven to 150 °C (302 °F) on grill.

    Cook the minced beef. In a medium-high heat frying pan, break up and brown the mince in about 2 tablespoon (30 ml) of oil (canola, olive, it doesn't matter).

    Add the beans. Once the mince is browned add the beans and mix into the mince. Cook for 1-2 minutes.

    Add pasta sauce. Try uinge about a third to half a 420g tin of pasta sauce. You want to be able to scoop the mixture up with the corn chips easily. Note that some jars or pasta sauce are superior to the cheap tinned sauces.

    Simmer until everything is thoroughly heated through.

    Arrange corn chips on an oven proof plate and spoon nacho mix on top.

    Grate cheese over top.

    Place the plate in the oven under the grill with the door ajar until cheese is melted.

    Serve with a couple of dollops of sour cream.

    Yes. Feel free to omit the meat and just use beans and/or add whatever other veggies you'd like.

Warnings

  • Keep an eye on the nachos when they are in the oven. The cheese only takes about a minute or so to melt so don't go anywhere while it's in there. The last thing you want is burnt nachos.
  • These are very filling, portion control is key.
