Kumquats are small oval orange like fruit, that can be eaten whole or preserved. This is related to the citrus fruit, with a sweet skin and tart flesh. Also known as "gold orange", this fruit is native to china, yet available freely all over the world. A preserve, will taste equally good, served as a dip or side item, and will greatly enhance a simple meal.
Ingredients
- 1 kg kumquats (ripened)
- 3 cups of brown sugar (white can be substituted)
- 1 bottle vinegar (medium or large)
- 1 teaspoon turmeric powder
- 6 cardamom pods
- 12 whole cloves
- A few strands of saffron
- 1 tablespoon mustard powder
- 3 cinnamon sticks ( or teaspoon cinnamon powder)
- 2 tablespoons crushed chili (optional)
- Kosher salt
Steps

1Cut each fruit, divide into equal halves.

2Place fruit into a container and marinate with a handful of salt and 1 tablespoon (14.8 ml) of turmeric powder. Mix well and leave aside for 3 days. This process will drain off excess liquid from the fruit.

3On day THREE, remove fruit from container and throw away excess liquid that would have accumulated at the bottom of container.

4Leave fruit aside for later use.

5Dissolve sugar into vinegar. Mix well until most of sugar dissolves in vinegar.

6Place into a pot and allow vinegar to come to a boil.

7Add cinnamon, cloves, saffron strands and cardamom into boiling vinegar.

8Continue to boil until a syrup starts to form.

9Remove from stove, as the syrup begins to thicken.

10Do not allow syrup to thicken completely. Must be removed before this process( thickening) takes place.

11Leave syrup aside and allow to cool.

12Now add chili, turmeric powder to kumquats.

13Mix mustard powder in a tablespoon of water and also add to kumquats.

14Mix well.

15Add syrup to kumquats. Mix well and store in a glass bottle or other suitable container.

16Refrigerate and use when required.

17Can be served with any main meal or savories.
