This tuna salad is very easy to make and only requires a little cooking. It is nutritious and provides a balanced diet that is high in fiber and very low in fat.
Serves one person
Ingredients
- 50g farfalle pasta
- 1 garlic clove
- 1/2 cucumber
- 1 avocado
- 3 tomatoes
- 120g canned tuna in water
- 1/2 can of chickpeas
- Pepper & salt
- Handful of coriander
- 1 1/2 tbsp olive oil
- 1/2 tbsp lemon juice
Steps
-
1Wash the cucumber, avocado, tomatoes and garlic.
-
2Deseed the avocado, then cut tomatoes, cucumber and avocado into small cubes.
-
3Mix the chopped cucumber, avocado, tomatoes and chickpeas with the olive oil and lemon juice in a bowl.
-
4Boil water in a saucepan to cook the farfalle pasta. Cook pasta according to the instructions on the package. Separate water from the farfalle pasta when done cooking to stop it from cooking any further. Put aside to cool.
-
5Chop the garlic clove.
-
6Heat oil in a frying pan. Put the chopped garlic in until the garlic is golden brown in color.
-
7Put the canned tuna into the frying pan. The toasted flavor of the garlic will be absorbed by the tuna fish. Fry for about 2 minutes until the water of the tuna is mostly evaporated.
-
8Mix the cooled farfalle and the tuna into the bowl of vegetables.
-
9You can put it in the fridge and serve later. Sprinkle a handful of coriander on top of the salad when served.
-
10Finished.
