Ingredients

  • 3 large onions
  • 3 large tomatoes
  • 15-20 cloves garlic
  • One big piece ginger (1 ½ inch)
  • Freshly crushed black pepper
  • Salt to taste

Steps

    Roughly chop the onions, ginger and tomatoes.

    Heat a saucepan and add the onions, tomatoes, ginger and garlic to boil with 2 big cups of water.

    It can. You can freeze it for a month or two or keep it in the fridge for a week or so. As wiith most soups, letting them sit in the fridge overnight helps meld all the flavors together.

    As the recipe calls for 2 cups of water, it depends on how much you want to eat in one sitting. For my house, ½ cup of soup or perhaps a bit more with the added veggies, is enough so it would serve 4. But if your appetite is bigger, it might only serve 2.
