This crustless onion and potato tart is of German origin. It's a lovely meal for colder days when served with steamed vegetables or meat, or it can be served cold for a picnic or cold luncheon on warmer days.
Ingredients
- 4 large potatoes
- Boiling water
- Salt
- 1 onion
- A little milk
- 2 eggs
- 2 tablespoons of all-purpose/plain flour
- A little thyme
- 1 teaspoon olive oil
- Grated cheese, enough to cover the top layer of the tart when assembled

1Clean and peel the potatoes.

2Put the peeled potatoes whole in boiling water. Add a little salt.

3Parboil the potatoes. Do not overcook so that they fall apart. Cook just enough to soften them a little.

4Remove from the heat. Drain and stand aside to cool.

1Cut the onion in half. Slice it into slices of 1 centimeter (0.4 in) thickness. The slices should be solid and not too thin.

2Put the onion slices in a frying pan with some butter. Heat gently and cook until they start glaze. The onions should not be fully cooked, so do not leave them to cook until they turn brown, just cook enough until soft and transparent.

1When the onion has softened, add a little milk. Keep heating but do not let it boil.

2Remove the pan from the heat.

3Beat 2 eggs. Add the beaten eggs to the pan of fried onion slices. Stir to thoroughly mix the ingredients.

6Cut the parboiled potatoes into slices. Layer the potato slices in a baking dish. Add salt to taste, thyme and a teaspoon of olive oil.

1Put the dish in the oven. Bake on a medium heat for 15 to 20 minutes.
