Cranberry vinegar goes well on salads and is a perfect addition at Thanksgiving and Christmas meals.
Ingredients
- 1 cup fresh cranberries
- 1 quart white wine vinegar
Steps

1Wash the cranberries. Remove any foreign items and dirt.

2Allow the cranberries to dry. This is easiest if you place them on kitchen paper towel that has been arranged over a wire cake rack.Advertisement

3Pack the cranberries into the container of choice. Fill three quarters of the way.

4Heat the vinegar to boiling point and remove as soon as it reaches this point.

5Pour the vinegar over the packed cranberries. Add any more cranberries if room, otherwise pop on the lid.

6Put the vinegar into a sunny place, such as the windowsill and let the vinegar infuse. Leave it for at least 2 weeks. If it is not a very sunny time of year, leave longer.

7Taste it. If you like the flavour, it is ready to use. If not, strain out the vinegar, add more cranberries to the container (pack down well) and pour the strained vinegar back in.

8Use it! Add to dressings for salads, including meat-based salads (great for leftover turkey).
