Although rabbit is not yet a staple in the North American diet, many Italian families eat rabbit quite often. The flavor and texture are comparable to chicken. Rabbit can be prepared in many ways, such as using this classic Cacciatore style. Try it for dinner tonight!

4Add the tomatoes and wine. Bring to a boil, and scrape the bottom of the pot with your spoon to lift any brown tasty bits that are stuck.

-
5Transfer the rabbit pieces to the plate using tongs.
-
6Give the remaining sauce a good stir. Add all of the fresh herbs to the sauce. Simmer until slightly reduced, about 5 minutes.
-

-
8Remove from heat and serve.Advertisement

QuestionI like this recipe, how can this be adjusted for a slow cooker?
Community AnswerStart by layering thinly sliced onions on the bottom of the slow cooker. Place the rabbit on top, and then the other ingredients except olive oil. If there is not enough liquid to almost cover the rabbit (using tomato canned in juice rather than fresh tomato would help), add enough chicken stock to do so. Cook for 8 hours on low or at least 4 on high. If the sauce is too thin when you're done, make a slurry with 1 tbsp cornflour and 2 tbsp water, stir into the sauce, and cook on high for at least two minutes or until thickened.
